I asked about that yesterday about an armaldo that I wanted to stick with that was female and was told that 30 SP.Def IVs should just be 2 less points at level 50 and 4 less points at level 100, so 1 IV less isn't as major as an IV less in something like HP, Speed, or either of the attacks

Assumming you have a neutral nature and no EVs, then yes, at level 50, 30 and 31 IVs will give you the same stat.
