What's a more realistic EV spread for a defensive Venusaur?

What do you mean by "realistic"? If you read the description, it'll tell you why those specific EVs, which do help a lot in competitive play compared to 252HP/252Def/4SpD.

Practically every Pokémon in VGC team reports have those sorts of spreads. They're designed to live specific hits or get specific KOs, without wasting any points going overkill on other calcs.
252/252/4 is fine if you're playing casually but they're often objectively outclassed.

I assume you mean realistically doable in-game where you can't see EVs that clearly but also as close as possible.
Just make it 255 HP (max), 100 Def, 139 SpD,20 Spe.
You use vitamins to get 100 in Def, 20 in speed, then you can max out HP, then max out SpD (only it won't actually max out it will stop at 139)

IMO, really specific spreads are usually, but not always, a waste because they are way too specific in what they are meant to counter. You won't always face the exact situation you planned for (coughVGCPachisurucough) because the metagame keeps changing to counter the things meant to counter them so what might be an optimal stat spread today will be sub-optimal next month.

You can't prepare for every situation like that though. I can understand running weird EVs for VGC or speed creep EVs for Showdown, but not maxing out one of your offensive or defensive stats could very easily bite you in the ass depending on the situation.
