How do I EV train in SM? Which routes are the best for each stat?

Just use Poke Pelago and do something constructive in the mean time.

It's all about having the power items and SOS battles (and potentially the pokerus). The pokemon you fight against itself doesn't really make that huge of a difference in time, so just pick one that wont mess everything up

Do you have the power items?
SOS chain one of the following. (There are probably some better choices but i'm too lazy to search for you)
HP - Maile City Outer Cap (Grimer)
Attack - Route 1 (Yungoose (day), Spinarak (night))
Defense - Route 12 (Geodude)
Special Attack - Hau'oli Cemetary (Gastly)
Special Defense - Route 2 (Drowzee)
Speed - Seaward Cave (Zubat)
Power items now give +8 and as soon as a SOS chain starts every mon gives double EV so you need 14 kills total.
only 7 if you also have pokerus.

Don't have power items?
Don't bother with wild pokemons. upgrade isle evel up to level 3, put your mons in there and go to sleep or masturbate or whatever for the next 16 hours.
If you have the cash you can stuff their faces with vitamins before for the first 100 EV in each stat you want to cut down the time they need in pelago.
