Fun Fact: I bought Moon for my GF for Christmas. She had never played a Pokemon game prior (aside from the TCG when it was still popular). While the team she ended up using through the end was only slightly balanced overall, she made it through the game with literally no trouble. I was pretty sure I was going to lose, but I managed to beat him with my Rowlet by spamming fuck tons of potions. Thank god I didn't get any more than maybe 1 or 2 stages of defense decrease. I would have been absolutely fucked because I had only one Pokemon.

SM was definitely harder than XY. The Totem Pokemon battles were a lot harder than gym leader battles.

Sun and Moon wasn't really the hardest
It gave you lots of TMs and z-moves, opportunities to heal, easy means to get exp, a wide spread of types available throughout the whole game
Compare it to gen 1, where you had your ass handed to you every time you exited a cave, or the hell that was Misty's Starmie when you only had three possible means of pulling a SE hit, and unless you picked bulbasaur, you were stuck with two low-level NFE mons with low-BP attacks
But at least SM tried to create interesting difficulty. Even with all the handicaps the game gave you, you could play through the game without much grinding at all, but the trials required a bit of ingenuity. And thank fucking god they didn't drop megas on you halfway into the game like XY.

But then the E4 hit and they really fucked you up if you didn't have a good variety of moves. Fortunately you could buy ice beam by cheesing slot machines forever, but if you didn't then Lance would tear your ass up.

Basically G1 became easy by cheesing. Yet, if you power level in G7 (easy, thanks to exp. share, refresh, and wonder trade/GTS), people say you're a retard for making the game "easy."

The only two totems that were even remotely tricky were Wishiwashi and Mimikyu.

Wishiwashi got fucked by a Scope Lens-Dire Hit combo, so fuck it's growls and defense boost.

Mimikyu was actually tricky. Bulked a lot of attacks. Wouldn't have won if it wasn't for my luck with continuously avoiding Hypnosis.

Ilima's Smeargle and Totem Lurantis were one of the few times I ever lost to an ingame trainer.

I do owe it to my specific playstyle though. I went with EXP Share off so I was underleveled a bit (the gap got worse after Lusamine though). It wasn't as bad earlier on but my team also wasn't fully established when I fought Ilima so he fucked me over. Meanwhile Totem Lurantis also did me in, though I still only had four Pokemon by that point. Thankfully X stat items are buffed heavily and if it wasn't for them I wouldn't have been able to beat the game.

The only other trainer to ever give me trouble in the entire series would be B2W2 Elesa on Challenge Mode, but that's about it.

Did you know you can fight Mallow and Lana? I didn't until after the E4, at which point I was two or three times their level. Maybe it would've been challenging if I did those battles as soon as they became available.

The game goes out of its way to prevent you from doing any exploration at all, and then when there are little optional bits like this you tend to miss them completely because you just sort of expect nothing to happen if you go off-path.

*Zubat's Supersonic is annoying, but you can just escape wild pokemon battles. This is actually far more difficult in S/M since everything has low base speed and they can call for allies.
*They did have a lot of trainers. I agree S/M should've had more trainers with larger teams.
*You could technically evolve your Magikarp before Misty (lv20), but I suppose it would have been difficult to train it up against Bellsprouts and whatnot.
*Your rival does not appear 'before you could make it to the Pokémon center'. He appears just before Nugget Bridge. If your reflex upon exiting a cave with a weakened team is not to head to the Pokémon center but to head to a new route, you deserve getting wiped.

Starmie is the only difficult battle in gen I, really, even if you chose Bulbasaur, but you were just dumb if you found any other part of the game challenging. Not even Brock was difficult if you chose Charmander because he didn't have any Rock moves anyways, and Bide was a check to see if you've actually caught more than one Pokémon.

Also Ice Beam was a TM you got in Celadon City in exchange for a Fresh Water. Slot machines only gave you Substitute, Hyper Beam and Dragon Rage, none of which are particularly essential. You also get a Blizzard TM later on, so you've got two Ice moves you can distribute across your team, no 'cheese' necessary.

Only battle I had problems with was Salazzle. - Although that's understandable if your team only consists of Dartrix and a Cutiefly.

Try choosing Litten then getting to the end with no Fairy resist. Primarina is fucking dangerous, it's an argument for having Tentacruel or Toxapex alone if you started with Litten regardless of the rest of your team in and of itself. Hits incredibly hard too. Grass and Electric types won't enjoy Moonblast while Poison types won't like dealing with the Water attacks. At least it doesn't have Ice Beam too.

A lot of the Totems depend on team composition. I had few troubles with the Akala ones thanks to having a nice Grass/Fire/Water core at the time. I soloed Wishiwashi with a Cottonee (pro-tip, don't kill the ally sadfish Wishiwashi before the Totem or you'll get Alomomola).

Mimikyu is the hardest Totem as you have so few potential counters and Disguise guarantees it gets a free turn. Ghost/Fairy is also really hard to deal with, you basically need strong Steel STAB and there's not that many Steel types in the game. The best trick for the first turn is a slow U-turn like Toucannon who can take one hit and break Disguise while giving you a safe switch into something else.
