So yeah I just got done fighting Llima for the first time and was surprised by how good his AI was. I had no idea he had a Yungoos and forgot that Yungoos could learn Pursuit. Since Slowpoke was at the lead of my team order Llima had the advantage and his Yungoos literally just spammed Pursuit the entire time. Didn't even use Tackle or Growl. After I eventually knocked out his Yungoos by utilizing Yawn, Curse, and Tackle Llima sent out his Smeargle and knocked out my Slowpoke with Leafage (I chose Popplio as my starter.). Afterwards I sent out my Magnemite that hadn't had any training at all and was at level 5. Llima's Smeargle made quick work of it with its STAB Tackle. I believe it knocked out my Magnemite with 2 Tackles. It didn't even use Leafage. Really impressed by the AI and I feel that the battle would've been a lot more challenging if Llima had more than 2 Pokemon compared to my 5 Pokemon I had at the time and the fact that Llima heals your Pokemon before the battle. So you can imagine my disappointment when I go on Bulbapedia and see that he only has Gumshoos (Although with a Z-move.) and Smeargle (Although with Water Gun, Ember, and Leafage giving it good coverage.). I imagine they didn't give him an extra Pokemon for balance reasons or something. Afraid that he might be too challenging for some. Oh, and I also turned off the Exp. Share and have the game on Set.

The game AI has improved in most cases, Hau's Raichu picked off my Salazzle with Quick Attack and its been awhile since an npc has done that

I'm glad stuff like this hasn't just happened to just me. At first I thought it was just RNG at play but hearing others talk about it reaffirms my hypothesis that the AI is better. Perhaps that's why so many trainers have only a few Pokemon.
I just fought Beauty Krystal and Pokemon Breeder Ikue and was disappointed that they both only had one Pokemon. Now I'm looking at the rest of the trainers on Alola Route 2 and Hau'oli Cemetery and they too have only one Pokemon versus my 5 Pokemon which are Popplio, Slowpoke, Magnemite, Pikipek, and Munchlax I got from Mystery Gift.
So far the best things I like about Sun/Moon are the small details. Like how the screen changes when approaching a Pokemon trainer and the new animations.

Well they used a super effective type move. If you had something weak to psychic on the field against an opponent with agility, they'd rather use that than an attacking move

Let's not forget the atrocious AI when it comes to Lusamine's pokémon and Pain Split.
I remember Lusamine switched out Lilligant after Petal Dance and I lost my fucking mind.

Just got done defeating my first Totem Pokemon. Magnemite made the battle really easy for me. It doesn't help that they give you the TM Brick Break in the same exact place so easily.
I got to say, so far I'm not particularly enjoying the Trials all that much. Hopefully it gets somewhat better.
