How are you supposed to EV train in these games?

SOS encounters yield multiplied EVs

With Pokérus + SOS Activated + Power Item you can fully EVs your mon by just killing 7 mon (that gives 1evs)

How are you supposed to train for really specific EV spreads though?

For specific EVs i use Poképelago, every session last 30 minytes and only 1 session gives 4 EVs

To get 252 you need to do 4 * 63 = 252 EVs
It will take about 32hours if i remember correctly, but if you use benas you'll halves the times
