Mahina-pea is probably its real name. Lanala is just a name that humans assigned it because nobody had seen the thing long enough to study it and figure out what the hell its name actually was.

But then you have cases like Rotom where we know a human came up with the name because it makes motors run backward, but the Rotom dex seems to accept that as its name.

Not exactly. Cosmoem is seen as kind of like an embryo in which doesn't really have a set gender until much later on in the stages of birth especially since it, like an embryo, has traits of both male and female (or traits of the sun and the moon).

So the way I see it, whatever version you have helps determine what could the Cosmoem's gender is (or whether it evolves into Solgaleo or Lunala). My apologies if the explanation is a bit shit.
