I firmly believe that this is because there will be a Switch game one day that uses the same function and will allow people to connect with Sun/Moon.

There could be no other reason. PSS was fucking perfect and used the bottom screen to its fullest. Removing it makes zero sense unless they wanted to prepare themselves for a future game.
