They are from the piles. In order to get what you want save before you start picking them and soft reset if you don't get what you want.

Each tree has a different set of berries that spawn there.
Each time a pile spawns it randomly picks 3-5 of this predetermined set.

My mons have randomn EV´s, some above 100, some below.
so i just punch a bunch of EV-reducing berrys into their faces until everything i dont want to be high is reduced to zero?

Yeah just make sure you SOS battle while trying to do it. Use items from Battle dome and Pokerus to maximize EVs

Also ExpShare applies the evs to everything in party

and the stats get changed too? like the atk will increase if i feed them atk-ev´s even if it is 100 already?
