Alakazam would be the standard answer. However, Espeon bears a much higher resemblance and fits more as her ace overall in my opinion.

Aw yeah good thinking, I never considered Espeon! I'm working on a personal project with her and some other Kanto gym leaders. Chibi and small is the style I'm going for, with one Pokemon per trainer.

Geodude for Brock. Staryu for Misty. That kind of thing. At this stage Abra and Espeon definitely fit the bill nicely.

Any other suggestions?

If they can only have one each, you're best bets are really Abra and Espeon. Espeon's a mon that has evolved though, if it matters. You could list other Psychics but they wouldn't have the same iconic-ness with her.
