What's a good set/nature for Palossand?

Bold or Modest. Calm for Assault Vest.
Shore up is mandatory.
Then for damage Shadow Ball and Earth Power.
It learns Giga Drain too which is great for the Assault Vest set.
Toxic is good for stall.
Iron defense or Amnesia for defense buffs.
It also learns infestation if you want to lock someone.

I run a bold nature Weakness Policy with defensive ev investments.
Shore, Earth Power, Shadow ball, Giga Drain.
Has worked pretty well. You have to predict and switch in on a water move.

This thing is really nonspecialized. The typing has some nice immunities and resistances, maybe you could run a bulky pivot set with Specs?

I like going with a bulky mixed attacker. It's speed is shit anyways. I Usually run Quiet, with Earthquake, Shore Up, Shadow Ball, and Giga Drain. I dump all the EV's into the defenses to keep Giga Drain as efficient as possible. Usually a Weakness Policy, but I've had limited success with a Wiki Berry and Lefties. I've been meaning to go for an AV set with Stone Edge over Shore Up.
