I'd just look at it like this:
You have 510 EVs to do with as you like over 6 stats
You can only have a max of 252 in a single stat

Let's say you want a Pokemon with Max EVs in Attack and Speed.
Just give your Pokemon Pokérus (not too hard with Wondertrade) and have it hold the Power Bracer (optional but makes it much faster).
sos chain some Yungoos/pikipeck. Just keep doing this until you've maxed the stat. (If you look at your Pokemon's stats and press Y, their EV Spred will be shown. If the stat is sparkling, it's maxed)

Just repeat for speed, replacing Yungoos/pikipeck with rattata/wingull and the Power Bracer with the Power Anklet.

The best part is these EVs are passed down through EXP share, so you can do this to multiple Pokemon at once if they all have pokerus and the held item of your choice

Use a paper and pen and calculate it by hand. It's not that hard.

For example, Yungoos gives 1 Atk EV each. With a Power Bracer it gives an additional 8, so 9 total. If you're doing SOS battles, you get double of that, so 18 for each mon. Pokerus doubles that again, so it's 36 per mon. If you kill two, it's 64.

So, if you want 44 Atk EVs, wear a power bracer, have a wild mon SOS, kill one, flee, remove bracer, then have mon SOS again and kill two. 36 + 8(4 each mon)= 44.

Both of those hacks are fantastic. I'm playing through volt white 2 right now so I would highly recommend that, but if you like johto better than unova there's no reason not to go storm silver. The increased variety of poker on is a lot of fun and if you ever want to know what's changed the patches often come with docs that include changed movesets, evolution methods, and encounter rates. The challenge is significantly improved on both and volt white 2 gives you the option to switch to hard mode before you get your starter.

Is there a list of which pokemon are more likely to repeatedly call for SOS and often have backup arrive? I've been doing this with wild Charjabug at the power plant after I noticed how they frequently call for help and get it successfully, especially after an adrenaline orb. I've tried this with other 2 EV wild pokemon before and its never worked this well.
