Can someone please tell me the proper way to use Celesteela?
I see the subseed set a lot, but what the fuck is it supposed to do in singles if they resist Heavy Slam? And if they have any SE coverage, you're not THAT bulky, and they'll out-pace your recovery. Like Ferrothorn can get by with Leech Seed plus Leftovers because he's bulkier than Celesteela, has a defensive ability, and has hazards. Is it just a meme? I am genuinely confused.
Am I supposed to use Autotomize? Or run an Assault Vest or something? I'm begging here, what set should I use?

There are three sets: specially defensive with Careful/Sassy, physically defensive with Impish/Relaxed and physical Autotomize with Adamant. There's also a potential special Autotomize set but you miss out on Heavy Slam so I really fail to see any reason to use it. If you want to run mixed defenses go Impish/Relaxed.

I appreciate the post anon, but this doesn't tell me what moves are ran. Is it seriously just subseed or bust?

Physical Autotomize is usually run with naughty to not weaken Fire Blast/Flamethrower.

Leech Seed + Protect works absolutely on Celesteela because unlike Ferrothorn it doesn't die to cheese Hidden Power Fires and has a neutrality to certain attacks while hitting targets hard with Heavy Slam. Fill in two other moves such as Fire Blast or Earthquake to lure in certain checks like Heatran.
And no, don't use Substitute. Protect gives you more predictive abilities and allows you to gain Lefties + Seed recovery in one turn.
