I don't understand why people think there will be a "Stars" version. If there is going to be a new pokemon game on the switch, it's going to be a Gen 1 sequel. Why?

Pokemon Go brought in a lot of people and reintroduced them to Gen 1 as well as introduced all new people to pokemon together. They wouldn't alienate new people from the series with pokemon they don't recognize

Secondarily, Sun and Moon left off with the protagonist heading off to Kanto to start her adventure there so the game would likely follow her or another MC through that area with her in tow.

Needless to say, there isn't going to be a follow up to the Alola region as "Stars".
