Depends. Gems were better for Unburden and Acrobatic shenanigans, but Z-crystals are good for things like Z-Status moves and having some diversity (like having a status move the same type as an attack move and using whatever fits the moment). I would say both are good.
Tho i prefer Z-crystals personally

Z-Moves are far more powerful than Gem-boosted moves

Only difference is Z-Crystals aren't consumed when they're used, so they don't activate Unburden or boost Acrobatics

Your 1 Z-Move would be better. But you could give each mon on your team a different gem if you wanted and actually use them. It wasn't limited beyond normal item restrictions.
