These depend on what you want to use them for. As a general rule, think of natures as being a way to boost one stat at the expense of a stat you won't use anyway, while EVs are just a way to maximize two stats(and give a miniscule boost to a third)

For example, a Flareon, which prefers physical attacks like Flare Blitz and probably won't be using special attacks, does well with an Adamant nature, which boosts its attack at the cost of its Sp. Attack. Dumping EVs into Attack boosts that further, while the other stat you boost is up to you(defense or special defense to last longer? or maybe speed to get a hit in quicker)

This has all been extensively worked out for each pokemon by the Smogon community, though keep in mind their stuff is all viewed through the lens of their tier system and you're under no obligation to pay attention to it. Even if you aren't gonna become a full smogonfag, the setups listed for each pokemon are a good guideline.

I got that, a good example would be Sylveon, you should boost Special Attacks at cost of Phsysical Attacks. But i want a general idea, i want a variety of options for each eeveelution.

Like your example, adamant nature for flareon. Why? 'cause it bosst this and thiss and you can do this and this. I'd like to have a variety of options to have make different strategies.
I have the plan to have a at least 3 different eevelution and waht i need is advices.

Unevolved Eevee
Garbage even in LC tier.
-Wish, baton pass, eviolite
-Evoboost, baton pass, eviolite
-Return, choice band, adamant nature
Really only does well as a cleric, and not a good one.

Espeon
Excellent pivot and hazard blocker.
-Calm mind, psyshock, morning sun, leftovers
-Psychic, trick, choice specs
-Wish, baton pass, choice scarf
All of these should run magic bounce, I don't even know what the other ability is. Decent lead. Beware knock off.

Flareon
Not very good. Outclassed by many pokemon.
-Flare blitz, superpower, choice band
-Superpower, facade, guts, toxic orb
-Wish, heal bell, baton pass
I do not recommend this one.

Glaceon
Just as bad as Flareon. Maybe worse.
-Ice Beam, choice specs
-Maybe toxic, roar?
I actually have no idea with this one. GF fix ice type.

Jolteon
Used to be stupidly good. Speed incarnate.
-Sub, baton pass, leftovers
-Thunderbolt, signal beam, volt switch, orb/specs
-Standard Eeveelution cleric build with volt switch
Jolteon has a hilarious base 130 speed. I recommend running HP ice if not cleric.

Leafeon
Maybe better than Glaceon? Eeveelutions aren't the best...
-Swords dance, leaf blade, knock off
-Sunny day, swords dance
-Leaf blade, knock off, choice band
A mediocre physical attacker. Frail, but does somewhat better on sun teams with chlorophyll.

Sylveon
My personal favorite. I actually use this one competitively sometimes.
-Hyper voice, pixilate, specs
-Wish, heal bell, protect
-HP Ground, quick attack, pixilate
Pixilate is one of the best abilities in the game. I recommend the specs set. Last set functions as a good revenge killer.

Umbreon
My second favorite. Special wall of the gods.
-Foul play, wish, protect, leftovers
-Toxic, heal bell, moonlight
This mon has a base 130 spdef and a base 110 def. It's options are limited to cleric/wall/stall, but it does it's job well.

Vaporeon
Apparently this pokemon is alright.
-Scald, protect, wish
-HP Electric, scald, specs
-Scald, roar, protect
