Did they nerf Soul Dew because nobody loved pic related enough?

Pretty much. It would be pretty stupid to waste your Mega slot on these when you have the far superior Soul Dew. But now that Soul Dew has been nerfed, Latios and Latias are just shit all around.

Would it have killed them to be more creative with their Megas?

Well that and they likely thought it was stupid having only one item banned from all battle modes that matter so they thought they may as well nerf it to remove the ban list.

I will never forgive Gamefreak for ruining my favorite dragon type like this. My heart sank when I heard about the nerf before the game was released and I genuinely considered not buying it.

I doubt it's going to change anyone's opinion on that thing anyway. They could have been created and made it fill a different role instead.

At least Mega Latias has a use over normal now. Latios is still better without the mega.

but honestly who cares. latias and latios are two of the worst designs for pokemon ever, and are part of why gen 3 marked the transition into overdesigned, uncreative rehash. disclaimer: i enjoy all the games in the series
