Both. It's a gimmick, because it relies on a single operative strategy to win, but it's legit because it reliably works even against people who expect it, but cannot just be spammed.
Also legit because it is the current best use of your Z-slot outside of baiting with obscure coverage Z-moves.

Porygon2 is great with eviolite. I used to run Toxic, Discharge (for the paralysis), Ice Beam, and recover. Worked out pretty well for me.

Yeah this is pretty much the go to set for Porygon, you might also replace toxic with tri-attack for a STAB.

As for ability all 3 is usable to some degree, you'll want to go with trace to use foe's ability against them though.

Charge Beam + Ice Beam + Rest + Sleep Talk with Trace was a lot of fun back in Gen 5 for me.

Tracing Flash Fire, Poison Heal and Speed Boost was glorious.

I imagine it would probably be terrible now though, since everything hits harder now.

Eviolite allows switch outs in exchange for a smaller stat boost that can't be Hazed away or stolen. Z-Conversion is one use and less reliable, but has a bigger reward. Its two totally different things.

It's unironically good but vulnerable to getting fucked over
