Is it better to invest in hp or defenses when you want to make something more bulky? for this example the mon has almost equal hp, def and s.def base stats

dpends on the mon, usually its better to invest in hp because investinging in hp helps both defensive stats, while investing in one of the defensive stats just help that stat. however mons that ahve ridcoulous high hp stat are sometimes better off when both defensive stats are invested instaed of hp, example: chansey, alomomola, guzzlord.

Generally you want to EV one defense so you can survive a specific attack, not just pick a stat and max it
