Well, most normal types, I think, are kinda made to be the most animal like.

And the one thing I think would work perfectly is making a normal/ghost based on an aye-aye. Aye-ayes based on legend are seen as ghost-like harbingers of bad luck. So a gimmicky single stage mon with an ability based around luck would make sense.

A good Normal/Ghost would simply be a zombie beast-like Pokémon. The Normal would be from it being a common animal, while the Ghost would be because well... it's undead. For example, you could have a Tauros evolve into a skeletal version of itself wrapped in a grim reaper's attire (Reaper Cloth). Of course, this'll never happen because it implies the Pokémon dies by evolving.

Got an idea for a Normal/Steel Type:

This one was kind of tricky, but I figured maybe something based off of a Scorpion Fly. It seems like a really cool design for a dragon bug, and it could be downright intimidating. Maybe it could even be the region's pseudo-legendary (even though I think we need fewer Dragon pseudos).

Normal/Poison: A living Syringe, one of several Data Pokemon created by the same person who made Porygon.

Normal/Rock: A pre-evolution of Lunatone and Solrock who is only capable of being found with a special insense, can learn a few egg moves neither evolutions can learn normally.

Normal/Bug: A bedbug with quilt-like wings that it snuggles around itself. Has a Thick-Fat like ability called "Down Quilt" that lowers Ice, Ghost, and Fighting type moves at the expense of doubling Fire weakness, learns Skill Swap.

Normal/Ghost: A ghostly hound dog puppy with no arms or legs but very long floppy ears that end in hands. Evolves into a Ghost/Fighting Hound of Baskerville (who also has no limbs on it's torso).

Normal/Steel: A living sword and shield combo made of Data, yet another of the digital series created by the same person who invented Porygon.

Learns moves like leech life, draining kiss, giga drain, trick-or-treat, glare, scary face, screech, super/hyper fang, refresh and recover. It's slow with mediocre strength, but good defenses and exceptional HP!
As a vampire, could have levitate as an ability (4 immunities! But the stats aren't too high so it won't be OP)

Poison/Steel: A rusted, extremely grumpy looking broken bumper car that appears to have crawled it's way out of a junkyard. Knows Electric moves and shoots them from it's bent rod meant to connect it to the ride.

Poison/Electric: An actual virus, perhaps even the Pokerus itself, but literally magnified like Honey I Blew Up the Kid to be big enough to be caught in a Pokeball. One of a Legendary Microscopic Trio.

Poison/Psychic: The "Alolan" form of Gulpin and Swalot with third eyes and a darker color scheme. Gulpin's third eye is wide open while Swalot's is almost furiously squinting shut, only opening during Special Attacks. Inside both of their mouths are psychedelic patterns meant to lure victims in.

Poison/Ice: An evolution for Cryogonal named Cryozontal. Instead of having a break only horizontally across itself for it's eyes to peer through it and at the bottom for a mouth it now has breaks along all outward lines, the segments held together with a sickly blue-green glow and it's now malicious eyes peering out from under two broken pieces meant to give the image of angry eyebrows. The snow dripping from it's mouth is now glowing the same eerie color and it's Pokedex information suggests that it's newfound type is connected to Nuclear power.

Poison/Fairy: The Poison Dart Kissing Frog mentioned above but more seriously taken and without all that hilarious extra dialogue.

Rock/Ghost: The third of the Legendary Microscopic Trio, even smaller than the first two and extremely hard to locate due to it's ability to simultaneously exist, yet not exist. It's form vaguely resembles that of Missingno as a twisting yet angular cloud of patterns when it's not flickering or momentarily reshaping to look like Gigyas from Earthbound.

Bug/Psychic: An immobile Queen Ant who's tubby butt is three times the size of her torso and head. Psychic abilities are there due to her being a similar evolution to Vespiquen and Mothim but with the alternate form (a Bug/Ground Type) being also Female and no Males existing. Evolution into Queen occurs only if the infant has the Careful, Modest, Jolly, Bold, Lonely, or Serious Natures.

Bug/Ice: A dung beetle who rolls up Snowmen instead of poop. Final Evolution has the bug's face poking out of the top of a large pile of snowballs.

Bug/Dragon: A massive earthworm the size of Gyrados or Steelix with a tiny derpy eyes and a massive mouth filled with rows and rows of grinding teeth. Evolves from an adorable babby earthworm who's about as useful as Magicarp the size of a feather boa. Both have a unique Ability that makes any Pokemon standing on the ground capable of being hit 100% of the time and any Pokemon floating above the ground capable of being hit 1% of the time, no matter which move is used. Does not work for 1 Hit KOs.

Bug/Dark: Since Cockroaches are illegal in Japan this Pokemon is merely an ovular shadow with angry eyes. When it attacks or is hit wings appear upon it's back looking for all intents and purposes like a cockroach shadow but isn't.

Do I really consider these inventions of mine to be potential Pokemon? Yes. Would I make them Pokemon if I had a choice? Probably.

Making the Rock/Ghost type a reference not only to Missingno but also Gigyas is, to me, an homage to Game Freak itself. I seem to recall reading that Game Freak (or people within it) had some part in the creation of Earthbound as well.

Fire/Grass: A jalapeno pepper that evolves into a ghost pepper but retains it's Fire/Grass typing, only learning Ominous Wind after it evolves.

Fire/Ice: The Second of the Legendary Microscopic Trio who seems to be a rather moody sort, appearing both in locations of intense heat and intense cold to thrive. Whether it is the cause of these sensations or merely exists because of them is unknown.

Fire/Fairy: The Battle-Bond Delphox. Makes Mystical Fire more powerful.

Note: Battle-Bond Chestnaught turns Spiky Shield into a Rollout-Style multi attack which still hurts anyone who attacks it.

Ground/fairy: a magical mountain spirit/sprite pokemon with the appearance of a cute tiny dwarf (similar to the earth spirit "gnome" from secret of mana series).
It is very small and agile, so it has low hp and defense, but its special attack, sp.defense and speed are great (for a ground type). It evolves from a ground/rock mountain pokemon which is so old and massive that it became nearly immobile and therefore depressed, spending the whole night praying to the moon and stars to free it from its burden. Its ability, "monumental", doubles its HP but cuts down speed to 1/4. when knowing the move "minimize" it can be evolved by using a moon stone.
Its ability becomes "underestimate", which works like a reverse technician. The power of all attacking moves will be capped at 60. But moves which are naturally 60 base power or lower will always trigger their secondary effect!
Moves that it can learn which benefit from this ability are confusion, ember (it learns fire moves because dwarves), dragon breath and a new special ground type move called "natural resources", which hits 2-3 times with each hit having a power of 35 and the chance to lower the target's speed by one stage(100% because of the ability).
It also learns mystical fire, earth power, moon blast, disable, power gem, bounce and pay day. It also gets skill swap which can cripple offensive mons immensely and gives it the chance to use those stronger attacks effectively.

Dark/Fairy: Mythical Legendary representing Yin and Yang with an unique move that splits itself for five turns into two Pokemon, forcing the opponent (and game mechanics) into a Double, Triple, or Quadruple battle depending on the Battle Type for five turns against it's Yin (Fairy) and Yang (Dark) sides who have pre-set movelists (Special Move, Physical Move, Support Move, Unique Move to Rejoin) and either Fairy Aura or Dark Aura as their abilities.

fighting tends to not be among them though so not much lost

on a fast sweeper the ghost immunity would give it a switchin and the normal stab would allow it to hit water and fire types for decent damage, as well as the normal types usually having large movepools giving it plausible access to something like say thunderbolt

and defensively? sure it would suck but would it really suck that much harder than trying a mono-ice defensive 'mon?

Working on a Poison/Steel line: based on a species of octopus that hides in coconut shells, but with trashcans. Pure poison first stage in a wastebin, poison/steel second in a trashcan, poison/steel final stage in a dumpster. Use trashcans etc. as shelter and as food source. Crawl around with arms that stick out of can to find better places. Dumpster evo has gotten too obese to leave dumpster, used powerful digestive juices to melt holes to stick arms through.
