Honestly, Pokemon SM were pretty mature. It doesn't get more mature than that without being edgy.

I don't think that kind of thing is a part of what makes Pokemon what it is. You'd really have to change the core plot. They could introduce slice of life elements by tweaking the breeding system so that you have to be care of inbreeding and wait for maturity. They could also add a mechanic where you have to have enough money to pay for shelter and food for your team and yourself. But, all of the slice of life elements that would bring Pokemon a very adult "task and supply management" vibe would turn it into a survival game, and I feel like that'd be a little out there.

Of course, they could also go a more political route where you plays as a champion in post-game, trying to navigate a new evil team coming. If you let the upstart kid beat them before you, the public will prefer them as champion. Something like that, maybe.

You will have to wait for a while, but the target audience for the Kanto Switch game will be the older generation of players who left the franchise after Gen 2. It may have what you're looking for.
