I don't know if you know this, but the castle in the Festival Plaza has an old man who will give you bottle caps if you exchange 30 of the same color shard pieces which you get in the cave exploring in the Poke Pelago. It'll take a long time, but it will help. Also the Lotteries in the Festival plaza can give bottle caps if you win the #2 prize. But that Mimikyu has a long way to go before using bottle caps.

What do I do to use bottle caps? Ik it changes the IVs but only if it's lvl 100 right? So I have to ev train this and level it up and then use the bottle caps?

It doesnt change the IV's at all, it just sets a flag in-game that says to treat the IV's as if they were 31, even when theyre not.

The IV's don't change at all, they get flagged to be treated as 31. To use a reference, Bottlecaps are horemones, and IV's are mentally ill people that think taking too many drugs will turn them from a boy to a girl, but really they'll always be whatever they were born with even if they look like the other sex.
