I got a bold one for a CM set but I'm aiming for modest on the second one. Is there anyway in sun or moon to register the other cover legendary in your pokedex? I'd like to eventually trade something for Solgaleo.

It'll evolve depending on the version it's in when it evolves into Solgaleo/Lunala. A Cosmoem from Moon that's traded over and evolved in Sun will evolve into Solgaleo and vice versa with Lunala.
Find someone who's willing to evolve your Cosmoem in the opposite version if you don't have both games.
