I want to see the story revolve around the issue of Kukui bringing the Pokemon League to Alola, thereby eroding the significance of the Kahunas and the Tapus. A tradition vs. modernity thing like some of the "leaks" for SM alleged.

As much as I liked the story of SM, I hope the fix the pacing for any third game.

So, there'd be a full 8 trials, plus the kahunas of course. I think the Elite Four will remain what they are, but in turn, they can't be both Elite Four members and captains/kahunas. Hau, as you said, becomes the Melemele kahuna, and Kukui or Burnet could be the Akala kahuna. Ilima, Lana, Kiawe, Mallow, and Sophocles keep their positions as captains. Guzma could be Acerola's replacement and have his own Bug trial in the Po Town mansion. Ryuki can be the Dragon captain, Mina of course would have an actual trial and be the Fairy captain. And uh, I want Gladion to be the champion, but it doesn't seem likely.

The evil team is gonna have to have a new name. Lillie being the Professor would be cool, I'd hope Lusamine has a role in the story as well. New UBs are probably not going to be a thing though it'd be cool. I hope Solgaleo and Lunala have involvement in the story a la Platinum. And yes, the thing you said about PokeRide was good.

You've hit all the points that I was thinking, but I think Pokeride should have different pokemon. They all seemed to blend together and should've been more distinct for what they were needed for & the whole riding idea was kinda unnecessary for a lot of them.

Lapras and sharpedo are good options, I think being able to fish off lapras and go fast on sharpedo is a good distinction, but maybe they don't need the whole gear setup. It would look cooler without the huge saddles I reckon

Could be different on each island or have a few different pokemon that are randomly selected to fly you. There are a ton of flying pokemon that deserve the spot more than just Charizard.

Tauros has a large model, so you get leniency when breaking rocks, but it has a larger turning circle and connects on terrain more. Having speed separately will allow you to have a nicer QOL speed mode, as dodrio being more vertical could have a smaller model which would make it more forgiving when colliding with terrain and also a smaller turning circle.

Also by differentiating speed from rock smashing, they wouldn't need the start-up to start smashing rocks, which they did with current Tauros.

There's also the throwback to pokemon ranger.

We're talking about a sequel, not a patch. Make the rock smash Pokemon smaller or just reduce Tauros' hitbox. Or if you're going to add Dodrio and specifically design it to have different movement mechanics, just let Tauros stay fast and give Dodrio something else to pair with speed so you can put one of the two on the d-pad and always have speed+something else in one mon.

I like all of this, though my idea for the antagonists would be a completely new evil team.
Called Team Monarch, they want to reestablish Alola's old monarchy and then try to take over the world, their beliefs that a traditional monarchy is superior and would lead to a stronger society. Very "might makes right". The team leader is a descendant of one of Alola's last island kings, who was a very ambitious man who decided to go all Fire Nation on the world, hence the "take over the world" plot. Originally, Team Monarch intended on catching Solgaleo/Lunala and subjugating the Tapus, but had to withdraw when the Aether Foundation and Team Skull moved in. Through implanting spies in the AF during SM, they find out about the existence of UBs, or in the Team Leader's case confirming their return. New goal is now finding a way to control the UBs and forming an unstoppable army out of them, though they still want Lunala/Solgaleo.
However here's a new turn in the story:
Say the sequel takes place 3 years after SM1, and ever since UBs have become more rampant in Alola thanks to Lusamine's past actions. Normally the reformed Team Skull and the AF are sent in to deal with them, but eyewitnesses report of another individual approaching UBs. This mysterious person wears black prism like armor and has his face covered by a helmet. The native Alolans have seen this person actually able to control UBs, and have begun to call him 'the Beastmaster'. However the Beastmaster is not a benevolent individual, as whenever he gains control of a UB, he commands it to immediately atrack the vicinity, especially near public areas. Reformed Skull and Aether have been trying desperately to apprehend the Beastmaster, and now Team Monarch wants to capture him so they can utilize his ability to control UBs.
