Im new to this breeding thing, the Eevee I hatched from an egg is now 12/6/6/6/6/6, I looked at showdown and it's apparently max IV's. I check the judge but there's only one stat that says Best. Is the Eevee 6IV's or no. And what does the THE stat text color mean (blue, pink, green)

The colors determine what stat the nature boosts/nerfs (red+, blue-), if none are pink or blue, it's neutral.
Ignore showdown. It's very difficult to calculate a pokemon's IVs until they're higher level (generally 20+ if you know what EVs they've earned.) Otherwise go strictly by in-game judge.

Fairly sure blue is 0.9x and red is 1.1x (Nature related stat changes)

Since only Atk is best, it's 1 iv, you would need all stats to be best to be 6 iv
the blue/pink/yellow text shows what stats benefit with the nature it has, since the eevee you posted is quirky and is a neutral nature, they would all be yellow so no stat gets boosted(pink)/reduced(blue)
So say you have a Timid eevee it would be +Spd(pink)/-Atk(blue)
