If we're doing the "animals I want pokemon of";

I want there to be a single-evolution, Dodo Bird Pokemon, but it's gimmick is that it's PURE. NORMAL.
It possess NO Flying-secondary type and cannot learn ANY Flying-type moves at all... Maybe Roost, but that's it.

It's just a vicious, mean, meat-eating, primitive inspired pokemon/animal, so Dragon I don't think is too unreasonable.

I also wouldn't be opposed to giving it a more kaiju/dragon-esque appearance, perhaps basing it off of or taking some physical inspiration from the typical "Axe-Headed" kaiju that's appeared in Ultraman and Pacific Rim.
