My headcanon is that the Tapus aren't guardians at all, and that them being guardians is just superstition that the people of Alola believe. In reality they're just really powerful Pokemon who have made each island their respective home, and with that they'll step in and protect the island if shit goes down. People saw this and started calling them guardians, and the Tapus just went with it because it meant the people treating them like gods and giving them free shit.

Tapu Koko saves you and Nebby because it knows all about Cosmog and that it'd be a bad idea to let it die. You just happened to be there with it, and it gives you the shining stone because you're a trainer travelling with it, so it wants you to protect it.

My personal theory is that the war Kanto went to years ago took place in Alola, which explains why there are so many Kanto Pokemon there in the first place. They literally destroyed the ecosystem, eradicating many Pokemon species.
