Dane here, would be sweet. Nips probably don't have a single clue what it's like here, so results could vary. I'm not against including the rest of Scandinavia though, seems like the German/Danish border would be the ideal starting town, and the league could be somewhere in Norway after crossing Sweden. Denmark doesn't have the slightest hint of a mountain, so we'd be starved for ice types. Add a desert area to Sweden, too. They'd feel right at home.

Mostly because Denmark doesn't have so many obvious well-known landmarks. They wouldn't have much to work with so they would have to add their own original things, like in the 4 first regions.

I honestly hate how pokemon regions are now so obviously based on real world regions. And it's not even good representations. You can pretty much trace back the entire trip that Game Freak's team took when they visited hawaii for inspiration. And it makes the games feel like you're on a guided tour instead of exploring on your own. Same was true with Kalos.

It left much more place for creativity before.

Because there are a lot of cooler places, like australia or africa.

I think a straight up Denmark region could work.

Lots of stuff to make diverse towns:

Copenhagen for the obligatory BIG City
Fishing town
Village near forest
Small isolated island village
Farming village
Town that's all about wind energy

Lots of possibilities for Pokemon:

Blackbirds are really common
Have we got a badger yet?
Two different snakes for the adder and viper - our only two snakes
Cow and especially pig is obligatory
A wolf legendary - Wolves has begun appearing after being extinct

Also nisser, trolls, jætter, elves, lygtemænd and all the rest of Nordic mythology and folk lore.
