Certain ones do certain things. They vary slightly in base power, certain ones are physical and others are special, etc.

Decidueye's and Incineroar's both have 180 BP and are physical moves. Ghost and Dark respectively, obviously. Primarina's has 195 BP and is a special Water move.

Others have other effects. A-Raichu's has the lowest BP of the unique Z-Moves at 175 but it always paralyzes the target.
