ESpeed Arceus even gives Primals trouble since it'll hit Primal Groudon for like 70-80%, maybe more, after one SD and is able to survive 1 Precipice Blades.

M-Kang loses to Arceus too unless it comes in at full health and either already evolved and has Fake Out, or it already got the PuP boost. It's hardly "btfo."

Extremekiller Arceus is arguably the top threat in Ubers, people have to constantly think "how does this stand up to E-Killer?" when they're designing their ubers team.

I don't know. Grass is far from shit. It's not the best type for sweepers, but there's a good variety of them and they typically have good support options. The power boost from grassy terrain makes things hit like a truck too.

Plus when Marshadow becomes legal, it will have tutor moves, which will further increase its usefulness.

Grass is very much a mixed bag. It's shit offensively, like really shit. Having 3 types weak to it vs. 7 resistances is bad. They also tend to have shallow offensive movepools. Defensively, it's weak to 5 types, but it also has 4 resistances, so it actually pairs up pretty well with a few types. Grass types also tend to have good support movepools.
