Well, basically you have to go through these island trials in place of gyms, the elite 4 are still a thing but I would just search up all the new things so you could understand it

There are seven Trials, replacing the gyms. It's a mini-quest that ends with a fight against a Totem Pokémon, which starts with boosted stats, can call for help, and use actual strategies. After you clear all the trials on an island (1 on the first, 3 on the second, 2 on the third, and before you fight the trial on the fourth) you fight the islands Kahuna, which is more like a traditional gym fight.

After you clear all the trials, you are told that normally, you go fight all 4 Kahunas again in a Final Trial, but because Alola is starting anpokemon league, the E4 will be replacing that tradition. Once you clear the E4, you become the first ever champion of the region and have to defend your title as the post-game.

Trial Captains:
Ilima - Normal
Lana - Water
Mallow - Grass
Kiawe - Fire
Sophocles - Electric
Acerola - Ghost
Mina - Fairy

Kahunas:
Hala - Fighting
Olivia - Rock
Nanu - Dark
Hapu - Ground

Elite Four:
Hala again
Olivia again
Acerola again
Kahili - Flying

Also when you're defending, you can be challenged by some of those trial captains, and also some other characters who also have types assigned to them. There's at least one specialist in every type in this game, so that's cool.

If the leaked battle teams are an indication, you battle some of them, who tend to have a team of 2-3 pokemon. The ones you dn't fight in the Trials however (and even some of them), will be fought later as possible Challengers. I know Sophocles (the Electric Captain) at least doesn't seem to have a team for his trial, so it sounds like you dn't ight him then, but he does appear to be a possible Challenger, since he does have a 5-pokemon team in the database that's all Level 60+, which is about the same as the other teams at that point.
