so whats the best way to EV train in Sun and Moon?

Waiting until postgame, resetting EVs and doing it the old fashioned way. Then you max IVs at level 100.

You can't really "alter" them. Hyper Training just boosts your stats to what they would be if you have max IVs.

For example, your Hidden Power type stays the same.

It's always better to breed in my opinion. Getting a mon to 100 is a bitch to do, and it doesn't seem like Alola has the Lumoise restaurant equivalent for grinding.
