Ilima can be battled twice in the main game, first before his trial and then after defeating Hala iirc.

Kiawe, Mallow and Lana can be fought after defeating Olivia.

Then there's Acerola in the E4 and Sophocles as one of the people who challenge you for the champion title in the postgame.

Mina can be battled as well but I don't know where.
