You can battle Sina early on with Dexio, but I haven't seen any rematch team for her. She also seems like the only Ice-type specialist in the entire game, which is disappointing since every other type gets represented a new character.

Could be. Everything that's been leaked is from Moon. Mallow, Lana, Kiawe, and Ilima don't have level 61 teams like Sophocles, but Sophocles doesn't have a three Pokémon team at level 26/26/27 like those three.

Then there are characters that specialize in a type, but their Trainer class only says "Pokémon Trainer" instead of "Captain" like the rest, though their teams match Sophocles in level.

Now I'm not an expert, but [~ 1], [~ 3], [~ 32], [~ 33], [~ 34], [~ 35], [~ 36], and [~ 37] could be placeholders for characters to be included in an update. Just look at the number of Mythical Pokémon in the game. Magearna and Marshadow, nothing else, and Magearna already starred in the most recent movie. Logic would dictate that Marshadow will be the star of the 2017 movie, but I really doubt that Gen VIII will be out in 2018. Maybe Game Freak has finally taken advantage of making event Pokémon actual updates instead of in the game from the start.
