Kang jr seems to be the remanent of the early idea that its suposed that when a pokemon hatches from the egg it borns like baby form of the first evolutionary stage of a pokemon and its not ready yet for battle.

Zygarde, Wishiwashi, Hoopa are just a reversible and momentary change.

The Carbink and Luvdisc cases seems to be an early idea of regional forms presented in gen 8. (or something like this in the Diance case, another factor besides the place triggers the form change, maybe time?).
