UB's are basically Kernelsprites from Homestuck, if you pardon the analogy. They take on the characteristics of the first thing they encounter.
In Sun/Moon, all of them encounter people (different depending on which version) and then take on their traits.

In Sun:
UB-2 takes on Gladion's traits
UB-3 (Papercraft) takes on Plumeria

In Moon:
UB-2 takes on Lusamine's traits
UB-3 (Bamboo) takes on Faba's

In Both:
UB-1 takes on Lillie (Before Games Events)
UB-4 (Wires) takes on Guzma's
UB-5 (Crab) takes on Hala
UB-R (Edge) takes traits from post-game Looker quest, from the villain he is tracking.
