the new pokemon games are going to be the same, the amount of exp you get from trainer battles is meant to work with the exp share to allow you to raise a balanced team of 6 mons easily.
i think that makes it your fault if you use 3 and get overleveled. you should try never having less than 6 mons on a team and keeping the exp share on, i'm sure it'll be more balanced than whatever it is that you have been doing.

But the exp share doesn't split the received exp gain. Every pokemon gets the full amount even if it doesn't battle. There's no difference if you have 1 or 6 pokemon.

I hate to say this, but maybe part of the problem is that there are too many pokemon available? Sure XY had a huge regional dex, but that also meant you could get a lot of OP pokemon in game, like a team of aegislash, garchomp, salamence, and even other pseudos. It doesn't help that the game hands out uber level mega stones like candy without the opponents ever using them against you. Of course you could steam roll through the game with all that power. The EXP share is an issue too, it makes it so easy to overlevel that even gym leaders aren't a problem. And don't even get me started on the shitty pokemon they use, with incomplete movesets like Tierno.
Pic related is why Platinum is so great, while games like HGSS and XY lack in any real strategy.
The games need
