It's reasonable, I expect them to be creatures that are supposed to be beyond box legendaries in power. Solgaleo and Lunala are shown to cooperate and entering the UB wormhole so those UB must be stronger than 600 base stats Pokemon for sure.

Nah. I can see them using a system similar to Totem Pokemon when you fight them, and once you catch them they'll have "normal" bst. Around the same as Box legendaries

When will this meme end? The only even remotely hard boss was Red and that's because he was crazy overlevel'd. The actual challenge with legendaries is catching them, knocking them out has always been a piece of cake.
