I think that's because Rhyhorns/rhydon horns are fairly short and basically rocks compared to actual rhino ivory.
On that note I don't think Rhydon/Rhyhorn hides would be in too great demand since, again, it would be like wearing rocks. And god help poachers if they know drill-horn and you face a heard of them. A one-in-five chance for instant death becomes a lot more harrowing when you've got twenty rhydons charging you.
In other words, I could see a lot of pokemon not being hunted as commonly as real-world analogues because, outside of labor and suchs, they're not nearly as useful for exploitation.
Legendaries, for one.
Farfetch'd: Hunted to near-extinction for being delicious and easy prey. Only exists in natural reservations in Kanto.
Corsola: Natural habitat progressively eliminated by marine pollution. Only exists in open sea coral reservations.
Snubbull: Raised as a toy breed for generations by specialized breeders; no longer exists in the wild.
Larvitar: Natural habitat severely reduced by construction and mining projects; considered endangered.
Wurmple: Raised into Silcoon/Cascoon and harvested for silk; population severely reduced.
Feebas: Mass-bred and evolved into Milotic for
precious scales; considered endangered.
Sableye: Hunted en masse for precious stones on its body; considered endangered.
Tropius: Hunted by natives for sustenance; considered endangered.
Any and all Male-only species.

I think the issue there is that legendaries are... Well, they're barely their own species (outside of maybe Mew) and more like fucking anomalies in the space-time continuum and natural order.
Pretty sure if it was theoretically possible to kill a legendary, they'd self-revive within time. Assuming it wouldn't destabilize the world.

Corsola I'd say would be okay due to sheer numbers. Corals are on decline, but not dead. Plus, anybody with a reef would sperg out to propogate/ breed them in captivity.
Mudbray/ Mudsdale due to being extinct almost everywhere, but it seems to do well in captivity.
