They're most likely Kahunas. Gamexplain's video explains it well. They greet you right at the dock of the island where the player arrives just like Olivia does.

Wishiwashi is already huge enough on its own that it doesn't need a totem sprite.

In addition, its assistants in battle (ie: Gumshoos summons Yungoos) are just regular Wishiwashi that aren't in School Form, so it makes sense to just leave it as is.
