All the stats and moves were scrubbed to Pikachu's and Pound's, and I belive that there are not all the models in the game

I don't think these things are possible, most Pokémon don't appear in the game and were srubbed. They only forgot to remove their Dex sprites.

Nope, Sun and Moon use actual sprites when you're in the pokédex, and then you can view the model if you want.
