I think a possible explanation would be that while you can block or scrub the data for the actual pokemon models the shiny forms may have been hard coded into their "catchable spots" and place holder data for it was kept.

And while I don't believe gamefreak would actually let every shiny form data be left in the demo it's very likely that any pokemon found in the areas within (even if not shown) the demo and their evolutions probably got left in.

The only other possibility is that the either data from the pokemon daycare, amie, camera mode or box mode wasn't completely wiped clean and the shinies are viewable through data mining.
