Depends how lazy GF is gonna be. Models, BST, maybe unreleased forms, but there's no way to tell right now.

oras demo leaked:

trainer mugshots (battle intro sprites)
base stat totals of all forms
dex sprites (every pokemon including shiny sprites)
info on primal reversion (needing orbs) and their heavy weather abilities (ability numbers, interaction)
hoopa unbound being morphed by the prison bottle key item
evolution methods, learnsets for all pokemon (except starters which were modified for demo)
move stats

Keep in mind, though, there's always the chance that they scrubbed the demo clean. We're not guaranteed anything other than what's in the first section. I'd love, though, as an example of something we might get, for them to have forgotten to remove the QR code code, which'd let us decrypt Ga Ole QR codes and learn things from them before the official release.

Don't expect anything major compared to ORAS, for a new generation they'll make absolutely sure anything important doesn't get leaked
