I was under the impression that most of Pokemon combat is about one hit sweeping unless you get outsped and have to use something to wall up.

Most of Pokemon is about getting 2hko's or revenge killing (weakening an opponent through Intimidate or damage, but failing to secure the KO so you bring in something else to KO it in return)
in fact, Gen6 Meta is so Revenge Killing focused, any team that isnt dedicated at stalling will lose if they can't stop the world's greatest revenge killer, Talonflame. Thats why TFlame is so good. It's not a sweeper by any means, it's a Revenge killer.

It cant even pop a Gengar's Focus Sash without being Adamant but ...

It CAN take out a weakened Mega Scizor even with 70/140 bulk (Skarmory's defenses, fwiw) without using fire moves.

You dont go to 100-0, you go to bring things down to near half and then finish them off and then set up and sweep. This is what got M-Luke banned; If you cant stop him from buffing, you cant stop him from 6-0ing your team.
