By using CIAngle you can download a title using a Title ID and said encrypted titlekey. The game is already up on their servers but nobody has the encTitlekey so by giving it a random titlekey (using the titlekey for Kid Icarus Uprising as an example) for another game it attempts to download it. Of course it will fail because it's not the correct titlekey but you can view the size of any title on the eShop servers.

All the ORAS demo really leaked was the art for the gym leaders/elite four and confirmed that there weren't any new megas that weren't already announced. So names and pictures, but not models.

There's a good chance the demo uses seed crypto -- that is, in addition to the titlekey used to encrypt the game binaries, the game's code/romfs are doubly protected with an additional 128-bit value called the external seed. If you've pre-purchased a game, you'll have the titlekey but not the seed -- Sun/Moon will be prepurchasable, so there'll likely be a period of time where people will have sun/moon downloaded and decrypted on their home menus but not be able to datamine/play them because the seed won't be released.

For the demo, since the first time we'll have the titlekey will be the same time a seed would be released (at midnight the day of), it won't really matter, but since it'll be relevant for sun/moon themselves it's worth mentioning.

(Cartridge copies of the game won't have seed protection, though, of course, so as soon as someone gets a cart early and dumps it it's game over).
