Granbull doesn't have much to do with the Fighting type. The reason I chose Dark is simply because it can scare other Pokemon, and to give it STAB Bite and Crunch (its most known for its strong bite).

The sun is made primarily of non metal elements so there is zero reason for it to be steel. High tempuratures are associated with fire and plasma could be associated with either fire or electric type. Funny enough most pokemon moves that deal with the sun are grass type so even that would make more sense than steel.
