Sure ,we already have Slaking, but it isn't a rock type and looks too ape-like.
Other things that would be rad as hell: Velociraptor, those elephants with the backwards tusks, Mosasaur (because I love the idea of alligators with flippers), those rhinos with too many horns, giraffe camels or marsupial lion.

It wouldn't be toofarfetch'd,Hawaii did have a ton of ducks that evolved and went extinct including a giant one. The remaining two are both endangered. One is being hybridized by mallards and the other got killed off in the main islands and there are only 600 or so left on two of the Northwest Islands. Just give it a Hawaiian plant like taro instead of a leak and boom, new alolan form or fossil mon.

think about it
rock/electric raikou fossil, perhaps raikou came to alola a long time ago and propagated, or perhaps it originated in alola and one somehow managed to find its way to johto and became a legendary unique pokemon there. you find the fang fossil and it turns out to be the ancestor of raikou, a unique electric/rock typed fossil mon.
then, kabuto/ps can be rock/fighting or if you wanted to go there rock/ghos, and we can bring back one of the coolest pokemon designs. it could even have grown to a super huge size instead of being a 4'3" manlet mon.
Two ideas I'd like to see:
Rock/fighting australopithecus that evolves into a caveman, maybe go with a bone theme. 1st stage has a bone club and a crude set of armour, 2nd stage has a more sophisticated bone weapon and a set of ancient warrior's armour made from bone.
