I just don't want Vaporeon in the middle, honestly. They could have done a trio with the original three flanked by Umbreon/Espeon flanked by Glaceon/Leafeon and have Sylveon raised above the trio somehow. Much better.

Keep in mind that you can only have + Nature in one stat, and only 508 EVs spread around your Eevee, so it can't get that 840 BST.
You also must use up a turn, hold an item, it only lasts as long as you are out, and the stat boost is worthless against Unaware users.

Of course you can pass it. Some people are saying you can't but there's no basis for that. The most common use of Eevee will be baton passing to Stored Power Espeon. This strategy will be used in battle spot and might see use in doubles as well depending on how Z-Move priority works.

It's likely that Eevoboost passing will be banned in smogon metas due to the speed component so there Eevee will fall into a lower tier, probably RU or NU where it will use one of 3 sets

2. special stored power abuser
3. wish curse last resort memeset

The +2 on everything baton pass would be good, but a bitch to set up.

Plus once it's done he loses the boost so is a wasted slot.

it's not unbeatable by any means, but it still sounds pretty potent. memento then send out eevee for the set-up (obviously don't memento on something with dragon tail/roar itself), evo boost, go to espeon unless the opponent switches in a dragon tail pokemon, a lot of which eevee can just sub in their face with the +2 def boost (defense evs are probably a good idea). espeon has magic bounce to prevent roar and stored power fucks unaware users since it still gets the power boost.

Having to give up a held item to get +2 in all stats isn't really good enough.

Megas are alright when it comes to losing their item because it doesn't take a turn to set up, and it's on preexisting "good" pokemon. Eevee is not a good pokemon by default, so the only way for this to work in your favor is through a gimmicky set.

And don't even get me started on Pikachu's. Losing the ability to hold a light ball makes that Z move useless.

The math isn't based on the trailers. It looks at Eevee's base stats now, does out the normal formula at lv 100 with the respective IV/EVs and the Nature, then doubling the real stat. Then I convert back the real stats into base stats with those respective IV/EVs and natures. If an Eevee with 31/252/+ in their attack stat and had Huge Power, the Real Stat should be equal to 159's Real Stat if the Base Stat 159 had 31/252/+.
