Hear me out on this: we already know how much Pokémon S/M are based on alchemy (the lion eating the sun, the chimeras as Type:Null, ecc...) so it makes logical sense that those ultra beasts are homunculus, artificial creatures half human half animal/pokemon. This would explain why the ones we've seen resemble human characters.
What do you think?
