No. All water moves become the same water Z-moves and same for other types. Only exception so far is Snorlax's exclusive Z-move.

Definitely not, the sheer amount of effort that would take would be enormous.

I'm guessing that each type will have a set of z-moves, and each move of the type will correspond to only one of the z-moves.

I was under the impression, before this image, that there was only one z-move per type, plus some extra z-moves for various pokemon, so who knows, really.

That has nothing to do with OP's question tough. Snorlax's Z-Moves actually require a specific move (Giga Impact), so that's one move that does have its own Z version in a way (At least for one Pokemon); we haven't been told if Raichu's Z-Moves need a specific move or if it can be done off any Electric move.

Every type moves will convert into one Z-Move.. Still not sure is there Physical and Special difference Z-Moves

You can use Hydro Pump whenever you want. But if you hit that Z-Move button and select Hydro Pump, your Pokemon will use Vortex. However, you cannot use any other Z-Moves for the rest of the battle. You can freely use the rest of your normal move pool before AND after you use your Z-Move

I would assume you get a Physical, Special and Defensive/Status/Stats Based Z-Move per type.
Its guess work to stop everything having a counter to everything because of moves like toxic, while allowing,say Kingler to be useful with a water Z-move.
